This is an easy all-in-one pot meal for busy people!
Serves 4
2lb /900g Stewing Beef, cut into 3cm cubes 1 tin of chopped tomatoes 1 teaspoon of brown sugar 1 cup of pearl barley 16 fl oz beef stock 4 carrots, peeled & roughly chopped 1 medium onion peeled & thinly sliced Freshly milled black pepper 4 baking potatoes

Preheat oven to 150C or equivalent.

Place all ingredients, except the potatoes, in a casserole pot. Stir well and cover, bake in oven for 2 hours.
3.
Scrub and score the baking potatoes, and place in the oven 45 minutes before the casserole is finished cooking.
4.
Serve the delicious casserole with baked potatoes.
